Pleurotus and potato flan

  • 500 gr of oyster mushroom
  • 500 gr of potatoes
  • 1 cup dry white wine
  • 4 tablespoons extra virgin olive oil
  • salt (to taste)
  • 1 tablespoon chili
  • parsley (to taste)
  • 50 g breadcrumbs

Wash the mushrooms under running water and dry them, divide the chapels from the stalks and cut the latter sliced quite thin. Peel the potatoes and cut into slices. Made chopped garlic and parsley and add it to the potatoes and mushrooms in a baking dish previously oiled and sprinkled with breadcrumbs. Before baking, cover with the mushroom caps sliced, still dusted with a little ‘of parsley and add the wine. Bake at temperature of 160 ° C for 40 min.

This is a healthy and nutritious recipe, thanks to the organoleptic characteristics of this type of fungus. The Pleurotus ostreatus has a delicate flavor, meaty texture and can be served to vegetarians and vegans.
